Slow Cooker Sweet Potato Soup


Prep time: 40 minutes
Cooking time: 1 hour
Servings: 4

Ingredients:
3 large Sweet Potatoes
1 1/2 cup of Vegetable Broth
2 Tbsp. Butter
1 Tbsp. Flour
1 12oz can of Evaporated Milk
1/4 tsp. Ginger
1/4 tsp. Chili Powder
1-2 Tbsp. Brown Sugar
Tabasco Hot Sauce
Salt and Pepper to taste 

Bake the sweet potatoes at 375 degrees for 40 minutes, or until the sweet potatoes are soft.  Peel and cube the sweet potatoes and place in a blender with 3/4 cup of vegetable broth. Blend on high until mixture is smooth.

Place butter, flour, ginger and chili powder in the slow cooker.  Turn the cooker on high and slowly add the evaporated milk.

Add the blended sweet potato from the blender, and add the remaining vegetable broth to the slow cooker. Stir until smooth.

Leave slow cooker on high for 45 minutes to an hour, until the soup is heated through.  Before serving add four dashes of hot sauce and the brown sugar.  Mix well.

Garnish with croutons or brown sugar bacon.

Sweet Potato and Chipotle Soup

One thing I have learned about myself while on this “adventure” is that for me to cook, it needs to be easy with few ingredients and VERY clear instructions. Now I know I have lost all credibility by becoming the first person in history to screw up Ramen, but I think it’s time to step back up to the plate and take another swing at this cooking thing.

After searching for a while for a tasty (and easy soup) I came across a recipe from Martha Stewart. Weird right? Martha is not known for easy. She uses popcorn as packing material for Christmas packages for goodness sakes. How do I know so much about Martha? I refer to my mother as Martha Stewart without the jail time. She gets inspiration from Martha and has become the queen of crafts, homemade baked goods and monogramming.

This Sweet Potato and Chipotle Soup seems so easy that even I couldn't screw it up.  Take a look for yourself!  And who doesn’t love sweet and spicy?  I would probably add a few dashes of Louisiana’s Hot Sauce – which I add to everything!

As Martha always says, “It’s a good thing.”
